Easy Microwave Scrambled Egg Cup Recipes

Ingredients

  • 1/4 c. pre-cooked meat (bacon, ham, sausage) 
  • 1/4 c. pre-cooked potatoes (hash browns or diced potatoes) 
  • 1/4 c. cheese (shredded or crumbled) 
  • 1 or 2 egg

Instructions

  1. NOTE: This is a base recipe for a make-your-own scrambled egg cup. Follow the recipes below for the specific varieties and use the following cook times.
  2. Prep your Microwave Scrambled Egg Cups by adding everything but the egg to a glass Mason jar. Use half-pint jars for 1 egg or pint jars for 2 eggs.
  3. Store the prepped jars refrigerated for up to 1 week.
  4. When ready to cook your breakfast, add 1 or 2 eggs to the jar and stir well. Microwave for 30 seconds and give the eggs a quick stir.
  5. Microwave an additional 40 seconds if you are using 1 egg or 60 seconds for 2 eggs.
  6. Carefully remove the jar of scrambled eggs from the microwave and enjoy!
